I finally got told my stir-fry veggies were too wet and it changed everything
My friend straight up said my stir-fry looked like soup last month lol. She was right though, I was dumping all the veggies in at once and they just steamed instead of searing. Now I cook them in small batches, like 2 cups at a time on high heat, and they actually get that char. Also started patting dry my mushrooms and zucchini with paper towels before cooking. Took maybe 3 extra minutes but the texture is way better now. Has anyone else had that moment where someone's blunt feedback totally fixed your go-to meal?

Man, three extra minutes is nothing! @blake_murray I honestly bump my dehydrator to 10 extra minutes just to make sure the thick stems are totally crisp. Nothing worse than putting up jars only to find a soggy shroom hiding in the middle a week later. I'd rather overdo it a bit than risk mold.
