Had a chat with a line cook about meal prep and now I feel dumb

I was complaining to a guy at my local butcher shop about how my meal prep always goes bad by Thursday, and he just said 'you're probably not shocking your greens in ice water before bagging them'. Tried it last Sunday with a batch of kale and it's still crisp today. Anyone else been doing this wrong their whole life?

Kale staying crisp for a few days isn't exactly a miracle, is it? Pretty sure most stuff stays fine until Thursday if you just wrap it in a paper towel.
