Hit 37 degrees on my pour over kettle this morning and it was a game changer

I always just boiled water and let it sit for a minute but actually measuring with a cheap thermometer showed I was burning my coffee this whole time, has anyone else noticed a difference from just a few degrees?

Man, I once spent a whole week slowly dropping my water temp by 2 degrees each day just to see what happened, and yeah it totally changed my brew.

Wait, you mean I've been scorching my precious beans this ENTIRE time with my 'just off boil' method? Guess my coffee's been having a little too much 'character' from those bitter, burnt notes.
