Your grandma's paper bag trick is smart, but I've found a sealed ziploc actually locks in the crisp better for me.

My grandma always used a brown paper bag for leftover fried chicken to keep the skin from getting soggy. The ziploc trick probably works on the same idea, letting just enough air out without trapping all the steam inside. I wonder if the type of crust changes how well it works, like a thin crust versus a deep dish.

But what if the steam is what keeps it from drying out, @willowc60? A sealed bag might just make everything chewy.
