Had to pick between old taco fixings and sad produce for lunch today

I had leftover ground beef and hard shells from Tuesday vs. a wrinkly bell pepper and half an onion. Went with a weird taco scramble and honestly it slapped, anyone else forced into these choices and surprised it worked out?

and honestly that old produce had way more going for it than you think. a wrinkly bell pepper roasts up sweet and the half onion adds all the crunch you need. you basically dodged leftover ground beef that sat in the fridge for three days, which is a win in my book.

Blew my mind reading that wrinkly peppers roast up sweet. Never would've guessed that, I always toss them when they get soft. Might have to test that out next time instead of wasting.
