I mean, ruby561 has a point about it being a side dish, but that bacon grease trick is a game changer. It's not even extra work if you save your grease in a jar like a normal person. Maybe it's just me but a cheap pan with bacon fat beats an expensive one without it any day. The flavor it adds is the whole reason I even make the side dish in the first place. Honestly, skipping that step is like making toast without butter, what's even the point?

Oh man, that's so true about things being a feature not a bug. I see this all the time with kitchen gadgets now. My new blender is so powerful it sounds like a jet engine, which is annoying, but it actually crushes ice perfectly.
