I just realized I've been using boiling water for my pour over this whole time
I was watching a video from a roaster in Portland and they mentioned their water temp was always 205 degrees, not 212. I checked my kettle and sure enough, I was just letting it go to a full boil every morning. Has anyone else made this kind of basic temp mistake with their setup?

Oh man, I did the exact same thing for months. I got one of those variable temp kettles and started brewing at 202, and the difference was huge. My coffee went from tasting kinda bitter and sharp to actually sweet and balanced. It was a total game changer for my morning cup.

Tried 205 for my light roast and it really smoothed things out. That extra control is a lifesaver lol.
