My sister-in-law called my air fryer chicken 'sad and pale' and I can't stop thinking about it
She came over for dinner last Tuesday and just bluntly said my chicken looked like it had given up on life. I was just doing my usual 20 minutes at 375, no oil, straight from the fridge. Turns out, she pats hers totally dry and rubs a tiny bit of cornstarch on it before cooking. I tried it yesterday and, okay, she was right. The skin got way crispier and actually had some color. It's a small extra step but it feels like a whole different meal. Anyone else have a simple trick that made a huge difference for a basic food?

Read a tip about letting meat sit out before cooking. Not for hours, just 20-30 minutes. Takes the chill off. Cooks more evenly. Stops the outside from overcooking while the inside is still cold. Made a big difference for my steaks and chicken.
