Wasted 45 minutes trying to get my cheese to stop sweating on the plate...
I put a big wedge of brie on my snack plate at room temp for a party last Saturday and it just kept getting wetter and wetter. Never had that problem before. I kept blotting it with paper towels and it got all mushy and sad. Turns out I was supposed to unwrap it like an hour earlier and let it breathe on its own. Nobody told me that. Has anyone else ruined a good cheese by not letting it air out first?

@victor_adams95 nailed it. I learned the same lesson after serving sweaty cheddar to my mother-in-law and she just stared at me like I was an idiot.

Everything in life has a waiting period nobody tells you about until after you screw it up. Paint needs to dry, meat needs to rest, cheese needs to breathe. We all learn the hard way.
