A regular customer handed me her grandma's handwritten sourdough recipe
Last Tuesday a woman who buys my rye loaf every week pulled out this crumpled envelope from her purse at the counter. Inside was a card with starter feeding times scratched in pencil, plus a note saying 'add more water if it feels stiff.' She told me her grandma baked this exact bread for 50 years in her kitchen in Philly before she passed. I followed it that night and the crumb came out way more open than my usual method, but the hydration was almost soupy. Has anyone else gotten a recipe from a customer or stranger that completely beat what you learned in class?
