Had a Saturday where every single loaf came out perfect - felt like a dream

Last month I had this one Saturday where everything just clicked. I was trying a new sourdough recipe I found online, and normally my first tries are disasters. But this time the dough felt right in my hands, the shaping was smooth, and the oven spring was huge. I pulled three loaves out of my old gas oven in Austin and they all had that nice crackle and golden crust. Even my scoring was decent for once, not those ugly slashes I usually get. I almost didn't want to sell them at the farmers market the next day, just keep them for myself. Has anyone else had a day where it felt like the baking gods were smiling on you? What went right?

Wait, you sold bread at a market that came out of an old gas oven in an Austin summer?

Ah man, "the baking gods were smiling on you" - that's exactly how that Saturday felt for me too. I used to think this whole perfect bake day thing was just people being dramatic or lucky, you know? But then it happened to me with a double batch of ciabatta and I realized some days the stars just line up. The dough temp was perfect, the humidity was right (I'm in a muggy coastal town so that's rare), and every ear I cut came out crisp. Changed my whole outlook on trusting the process versus fighting with the dough (which I do way too often).

Holy crap, a double batch of ciabatta? That stuff is finicky enough for one loaf. I can't imagine trying to nail the hydration and folding schedule for two batches at once. You must have had that dough temp dialed in to the exact degree.
