Just hit 1,000 perfect croissants in a row and I'm kind of freaked out

I've been tracking my batches at the shop for six months, and after this morning's bake, my notebook says I haven't had a single lamination failure or underproofed batch since March. It feels like a weird baking fluke that's bound to break any day now. Has anyone else ever hit a streak this long and then immediately messed up?

Stop worrying about a fluke and start trusting your skill. That streak proves your process is solid and your hands know exactly what to do. Getting in your own head is the only thing that will mess you up now. A thousand perfect batches means you have control over your environment and your craft. The streak won't break because of luck, it will only break if you change something that works.

Yeah that part about "getting in your own head" is so real... reminds me of when I kept re-checking my oven temp every five minutes and burned a whole tray of cookies, @lee.diana. Just gotta let the thing do its job sometimes.
