Hit 227 internal temp on a brisket in Wichita and the probe slid in like soft butter
I've done maybe 15 packer briskets on my offset and never had one probe this easy. Pulled it at 3:40pm after 13 hours on a 14 pounder from a butcher over on North Broadway in Wichita. I usually fight the stall around 165 and start second guessing myself, but this one never stalled hard. How many of you actually trust the jiggle test over the thermometer on a big packer?
