Stopped at a roadside pit in Lockhart Texas last Thursday
The guy running it used nothing but post oak and a homemade cinderblock pit, and his brisket was better than anything I've had from a $10,000 offset. Has anyone else found that simpler setups sometimes turn out better food?

Buddy of mine had some guy smoking ribs out of an old oil drum and they were literally the best he ever ate.

@the_gavin, must've been an old Weber or something similar, not a plain oil drum. Those barrels have that coating inside that's pretty bad if you cook in it. Your buddy's guy probably cleaned it out real good first.
