Caught a knife slipping on a whole ribeye at the shop in Tulsa last Tuesday
The steel had a chip I missed during the morning check, blade skipped sideways and gouged a 2 inch divot in the cap. I salvaged it by trimming into steaks instead of a roast, but now I'm running a thumb test along every edge before I start. Anyone else do a quick flex check on their knives before they break down a big cut?
Man, that chip hiding on you is the worst. Here's a thing nobody talks about though, those little chips usually show up right after someone else borrows your knife or you hit a bone you didn't see. I started running a fingernail down the whole edge instead of my thumb, catches way more. Might just be me but a light tap on the board before I start tells me more than a look ever does.
