I used to toss beef fat in the trim bin until a guy at the Kansas City plant showed me the numbers
For 3 years I treated fat as trash and let it go out the back door with the bones. Then a renderer I met at a plant in Kansas City told me his outfit pays around $0.45 a pound for clean kidney fat and closer to $0.30 for trim fat, and I did the math on our weekly 40 pounds of waste. That is real money walking out of my shop every single week. Now I keep two separate bins, one for hard fat and one for trim, and I call for a pickup twice a month. Anyone here rendering their own tallow instead of selling it off, and did the labor ever pay for itself?
45 cents a pound for kidney fat?? I've been giving that stuff away for free to a guy who barely even says thanks. That KC renderer basically handed you a raise and you didn't even have to ask for it.
