My cutting boards keep bowing after washing.

They dry unevenly I think. What's your method to stop this?

Oh, I read to rotate them while drying!

Do you wash them with hot water? That can make the wood expand too quick and bow as it dries.

Cold water's definitely better... it doesn't shock the wood like hot water can. Patting it dry and keeping it flat while drying stops most warping issues too.
