That boning knife that caught me in the knuckle
I was breaking down a pork shoulder at my shop in Pittsburgh last Tuesday and my boning knife slipped off the bone straight into my index finger knuckle. Blood everywhere on the cutting board and I had to stop and wrap it up with a towel while my coworker finished the primal. Does anyone have a go-to grip or technique that keeps their hand locked in place when the knife really digs in?

Tried that thumb-on-spine thing after my buddy Dave sliced his thumb open cleaning a leg of lamb at his place. He swore by it, said it kept his whole hand from bouncing around when the knife hit something stubborn. I gave it a shot on a chuck roast and yeah, way steadier than my normal grip.

Heard a tip from a butcher over in Philly. He uses a claw grip but keeps his thumb pressed flat on the spine of the blade. Gives you extra control when you're really forcing the tip through tough sinew. Tried it on a brisket last week, felt way more locked in compared to that standard pinch grip.
