The difference between a $40 boning knife and a $120 one is real

I bought a cheap one from a supply catalog because my old one broke, and it went dull after breaking down maybe six hogs. My boss let me borrow his high-carbon steel one for a week, and it was still sharp after doing the same work. It just holds an edge so much better and doesn't feel like it's fighting you. Anyone have a good brand that won't break the bank?
