The key is not just speed, it's knowing exactly where the joints are so the blade slides right through instead of you fighting it. I spent a summer breaking down whole hogs for a BBQ joint and once you learn that seam, it's like the meat practically falls apart for you. A sharp thin boning knife and a steady pull beats sawing and hacking every time.

Oh, that is something else! I used to think that kind of speed was just showing off, like a circus trick. But after watching one of those demos myself, I realized it's actually about understanding the anatomy so well that you're barely using any force at all. Once I tried following along at home, I found if you take the time to feel for the joints rather than just chop away, you save a ton of time and the meat comes out in nicer pieces.
