Honestly this makes me feel so gross. Diner coffee is already kind of a gamble, but knowing it's been sitting there for three hours just turns it into brown liquid regret. Ngl I've been to places where the coffee literally tastes like it's been cooking for a whole shift, and now I know why. Tbh I'd rather just ask for a fresh pot or go without than drink something that's been baking on that hot plate all morning. That's straight up not even coffee anymore, it's just bitter brown water.

A fresh pot is usually fine if they're dumping the old stuff first, but that three hour timeline feels more like the worst case scenario than the average... most decent places will swap it out way before that.
