Changed my mind about needing a dedicated room for my ferments
Last month, my basement flooded in Raleigh and I had to move everything to a kitchen cabinet. The consistent 70 degree temp there has given me my best kimchi batch yet. Who else found a better spot by accident?

Funny how life does that, right? It's like when you're trying too hard to control everything and then something forces your hand and you stumble onto a better setup. @paulperry's cabinet door story made me laugh but there's a lesson in there too. I've noticed this pattern where the best solutions come from not overthinking it, like how we all have that one kitchen drawer that holds all the random stuff but somehow it works perfectly. Same thing with ferments, sometimes the spot you least expect ends up being the secret weapon for good fermentation.
