PSA: My grandpa's kvass was flat until I spotted the cellar note
My grandpa's method for kvass always turned out without fizz or flavor. I poked through his dusty journals and noticed a line about leaving it in the cellar for a bit longer. I gave it a go by setting it in a cool corner for an additional day. Now it bubbles up and tastes just like his did.

Disagree, extra time might just spoil the batch. Cellar conditions vary too much to rely on that note.

Oh so your grandpa just hid the good stuff in his notes, classic move. I guess @sage787 is right, those tiny microbes really do call the shots on when the party starts. Next time I find a weird family note I’m just gonna assume it’s a secret note for better snacks. You think your grandpa ever tried the fast version and just pretended it was always this good?
