Question about a vinegar pie recipe from a church cookbook in rural Kentucky

I found a handwritten recipe for 'Depression Era Vinegar Pie' in a 1932 church cookbook at a yard sale in Lexington, and it uses just pantry staples like vinegar, sugar, flour, and water for the filling, but who even thinks to make a pie out of that anymore?

Agree completely. My grandma had a similar recipe she called "poor man's pie" and it was honestly one of my favorites growing up. That tart, almost lemony flavor from the vinegar always surprised people.

My great aunt made a version of this every Thanksgiving. The key is using a good apple cider vinegar and blind baking your crust first so it doesn't get soggy. It comes out tasting like a weird, tart chess pie and it's actually pretty good. You have to remember those recipes were about using what you had when you had nothing.
