The lady at church told me I was ruining my roast by opening the lid

I was bragging about my pot roast at the potluck last Sunday and Mrs. Patterson from the third pew cornered me and said I 'let all the heat out' by lifting the lid to stir it. She said I might as well just boil the meat on the stove at that point. Does it really mess things up that bad to take a peek every hour or so?
