I finally figured out the trick to not burning scrambled eggs

After 40 years of making rubbery or burnt eggs I tried taking the pan off the heat a full minute before they looked done and they finished cooking in the residual heat.

Oh man that's genius actually. I've been making eggs for years and I swear sometimes I just stare at them like they're gonna cook themselves. The residual heat trick works great for pancakes too, I found out by accident when I got distracted by the dog barking at a squirrel.

@margaret_singh1 you're spot on about pancakes too, I had the same thing happen with french toast once. That "take it off early" tip really changed my whole breakfast game. And yeah, staring at eggs like they'll cook themselves is way too relatable. I ruined a dozen eggs last week just by looking away for one second to grab the salt.
