My friend said my cinnamon rolls were too dense... and she was right
She told me last week, 'You're overworking the dough, it feels like a brick.' I always kneaded for a full 10 minutes by hand. I tried her tip to stop as soon as it passed the windowpane test, which was only about 6 minutes. The next batch was so much lighter and fluffier. Has anyone else had a kneading time that was way off from what a recipe said?

oh totally, I did the same thing with pizza dough once. the recipe said 15 minutes and I went the full time, ended up with these tough little discs. now I stop as soon as it feels smooth and it's a game changer.

That's the real trick with dough, you gotta feel it instead of just watching the clock. My grandma used to say overworked dough makes sad bread. She'd stop kneading when it passed the windowpane test, just stretching a piece thin enough to see light through without tearing. Changed how I make cinnamon rolls completely, they went from dense bricks to super soft.
