My grandma gave me a 50 year old sourdough starter last week and I finally understand why her bread tastes so different

She said she's never used commercial yeast in her life and watching her explain how temperature changes the flavor made me realize I've been treating my starter like a recipe instead of a pet.

Gotta disagree with @faithb78 on this one. A starter is basically a science experiment, not a pet that gets attached to its owner. Temperature and feeding schedule matter way more than some mystical "mood" people talk about. If your bread isn't turning out right, it's probably just math and timing, not a stubborn starter.

Treating it like a pet is exactly right! I've been feeding mine for two years and I swear it has moods, sometimes it's super active and other times it just sits there being stubborn. Temperature really is everything, I keep mine by a window in the winter and move it to the pantry in the summer.
