I finally listened to a customer who said my pork shoulder cuts were too thick for their smoker.

They told me their 18-inch Masterbuilt couldn't handle my standard 3-inch chunks, so I started offering a 2-inch option and my sales in Knoxville doubled last month, so what's the thinnest you'll go on a cut before it dries out too fast?

Try 1.5 inches max, like lee.diana said.

Have you thought about how the smoker's air flow changes with thinner cuts? I'd worry about 1.5 inches drying out unless you're really watching the temp.

Yeah, @stella307 is right about the air flow. I won't go under 1.75 inches myself, or it just turns into jerky too fast.
