Unpopular opinion: Never add sugar to tomato sauce for pasta
Every recipe I see online says add a pinch of sugar to cut the acidity, but my grandma in Naples taught me to just simmer it longer. If you use good San Marzano tomatoes and cook them for a solid 45 minutes the sweetness comes out natural. Anyone else skip the sugar and just let the tomatoes do their thing?

My first attempt at no sugar pasta sauce I forgot to simmer and ended up eating what basically tasted like sweet ketchup mixed with regret. Now I just set a timer on my phone and pretend Im being productive while the tomatoes do the real work.

Hold on, I gotta disagree here. A timer is just admitting defeat before you even start. Real cooking is about feeling it out, tasting as you go, and knowing when it's done without a beep telling you. That sweet ketchup thing you got the first time? That's just the universe telling you to pay attention to your food instead of your phone. Next time skip the timer and just stand there watching the pot bubble, you might learn something.
