Warning: The bakery in the old train station on 5th has a very dedicated sourdough starter
I went in for a croissant yesterday and the baker pointed to a bubbling jar he calls 'Betsy' that's been alive since 1998. He said it's the only employee that gets its own office chair. Has anyone else seen a starter with better benefits than the staff?

Remember my buddy tried to restore a car with a "matching numbers" engine from 1996, but the block was actually a 1994 casting. That kind of date code stuff gets super fuzzy, especially with parts that sat on shelves. Makes you wonder how many "1997" items out there are just using older stock that got assembled later. The whole model year versus production date thing is a rabbit hole.

So a starter from 1998 gets a chair. What's the actual policy for calling in sick? Does Betsy get paid time off if the baker goes on vacation, or does she just work for room and board in the fridge?
