inMy grandma's arroz con pollo recipe used to call for a full cup of oil, but I cut it to a quarter cup now.
Honestly the "make it work for your own kitchen" line hit me. I was such a purist about using lard for years, thought anything else was wrong. But my doctor told me to cut back last year, so I tried the broth swap for my birthday tamales. Couldn't believe how good they still were, the texture was spot on. Changed my whole view on sticking to the "right" way.

inPSA: The aluminum panel repair jobs coming into our Tacoma shop have tripled since 2021.
Yeah Ford went all in on aluminum for the 2015 model year to save weight. I read a whole article about how they said it was more dent resistant but everyone knew scratching would be a thing. Your neighbor @clairem81 is definitely not the first guy to learn that lesson the hard way. It's a truck bed, it's gonna get marked up if you actually use it, aluminum or steel.
